Santa Vegan Pancakes

Easy Vegan Santa Pancakes

Ingredients
  

  • 3 cups all purpose floor
  • 4 tbsp granulated sugar
  • 2 tbsp baking powder
  • 2 cups plant-based milk
  • 2 tbsp apple cider vinegar
  • 4 tbsp vegetable oil
  • 1 tsp vanilla extract

Instructions
 

  • Mix together the flour, baking powder and granulated sugar in a large bowl or electric mixer (I have the Kitchenaid mixer).
  • On the side, add the apple cider vinegar to the plant-based milk and leave it to rest for a few minutes for it to curdle. This will act as egg substitute so the batter doesn't break when cooking.
  • In the meantime, add the oil and vanilla extract to the bowl or mixer and start stirring. Add the the plant-based milk / apple cider vinegar mix when ready to the bowl or mixer and stir until fully combined. Do not over mix or the pancakes may not be as fluffy.
  • Heat up a non stick pancake pan over medium-high heat with a tiny amount of vegan butter or oil. I use the olive oil spray, I find it to be the best to cook pancakes or crepes.
  • Pour about 1/3 cup of the batter onto the pan. Cook until bubbles form on the surface, then flip with a spatula and cook until the other side is golden brown. Repeat until you have a stack of delicious pancakes.
  • Take one pancake and place it in the middle of a large plate. Cut up a banana in slices, wash your strawberries and cut length them in half.
  • Make Santa's beard: Add maple syrup on the bottom half of the pancake (that's optional) and place the banana slices over it. It should cover about the bottom half of the pancake, add more banana slices at the bottom for a long beard effect.
  • Add Santa's hat: Add the strawberry halves at the top edge of the pancake in a hat shape. Add a dash of whipped cream along the strawberries/pancake edge and at the end of the 'hat'.
  • Form Santa's eyes and mouth: Simply place two blueberries as Santa's eyes. You may add some blueberries over the bananas as Santa's mouth.
  • Add Santa's nose: Cut the bottom of a strawberry, turn it around and voilĂ  - place it between the blueberries and the banana slices.
  • Complete the Look: You may add some whipped cream at the top edge of the banana slices as Santa's moustache (or for the whipped cream lovers)
  • Serve and Enjoy: Serve the Santa Pancakes and watch as the little ones light up with excitement at the sight of these festive treats.
